🧄 Garlic Confit Preparation

  1. Place the peeled garlic clove in a small ramekin or heatproof bowl.
  2. Cover with 2 tbsp olive oil.
  3. Air fry at 180C (350F) for 15 minutes until golden, soft, and aromatic.
  4. Allow to cool slightly before adding to the blender.

  1. Add the mango, red onion, spring onions, habanero, ginger, turmeric, rosemary, basil, black pepper, smoked paprika, and lemon juice into a blender.

  2. Add the garlic confit along with its infused olive oil.

  3. Blend until smooth and thick.

  4. Taste and adjust seasoning — more lemon for acidity, more basil for freshness, or more habanero for heat.
